Here is our vegan version of the meal over pasta.
This is super easy to make, plus you’ll save the calories by going meatless. This is one of our favorite dishes to make mid week. We like to have it with a glass of Sauvignon Blanc or Chardonnay. You’ll feel guilt free all around when enjoying this meal.
*1 box of whole wheat or grain pasta (we like Nature’s Way or Barilla Plus)
*1 jar of tomato sauce (we like Victoria or Cucina Antica)
*1 large red onion
*2 green bell peppers
*1 tablespoon of olive oil
1.) Cut bell pepper and onion into thin slices
2.) Drizzle olive oil into large frying pan
2.) Add the onion and pepper and cook over medium heat for 10 minutes
3.) Heat tomato sauce over medium-low heat
4.) Boil pasta “al dente”
5.) After pasta is drained, mix in sauce and onion/peppers
